Could someone tell me why there’s no more the green question mark next to the nextdns.io?

Click the "More Details" and it will probably say that it has expired. It still works though, it's just for when it gets installed.

No, it hasn’t expired yet. It’s been quite a while since I last saw the green check mark, though.

The profile authentication mechanism (at the time of installation) is to ensure that the profile is downloaded from the (official) signer, without being edited.

After installation, the authentication process is no longer valid, because during the installation process you have viewed and identified (with a green check). This is the display mechanism of iOS 18 after the profile is installed. If you go to the Details section, you will see the certificate used for authentication.

To not sign the profile as well as if you want to edit the profile. When downloading at apple.nextdns.io, select More options, turn off Sign Configuration Profile.
