App vs private dns
Is the benefit of using the app that I can setup per device configurations instead of using the private DNS on android? Also, if I setup nextdns on the router, all devices behind that router will use the same configuration?

I'd say Private DNS or other built in options are likely the best as they are built into the OS's, I wouldn't go with the above mentioned method a device per configuration though as it would get out of hand too easily. You can enter your device name while entering your DoT/DoH (Private DNS/Apple Config/Chrome and other browsers etc) by going that route, you can stil identify devices and know what's doing what but you can simply the process and only take care of a single set of settings.
