Android devices suddenly resolve google DNS instead of NextDNS on mobile data, for sometime it resolves to nextdns then changed to Google DNS.
i am using NextDNS app on android.

It could be that your phone might be messing with the app, the easiest solution should be that if you have android 9+ use Private DNS in the settings as its built in the OS itself.

If you have the PrivateDNS connection setting on your phone configured correctly - then it shouldn't matter what the hotspot uses for its DNS providers.
You can confirm by going into airplane mode - just connecting to hotspot - and see if your lookups are appearing in your PrivateDNS profile logs.
Then do the same by turning off WiFi and just connecting to mobile network.
It only wouldn't work if the hotspot is blocking DNS queries from the connected devices and only allowing DNS by using the hotspot - at which point - you are susceptible to man-in-the-middle attacks and shouldn't be using that hotspot.
Or if you have something else on your phone causing conflicts with your connection settings.
