Ping difference with unencypted DNS & encrypted DNS?

This is just a curious thing I found out and I am just wondering why because I know they has to be some reasoning to it. I found out when I enter the dns into the router and make it the dns to use it goes to zepto-xrs (30ms) but when you use the windows program which is using DNS over HTTPS it goes to the fast one for me which is vultr-chi at around 11 ms and which also happens to be one the ultralow servers?
