Is it possible to block all non encrypted HTTP connections using Nextdns? If yes, then how?

No as DNS doesn’t care if http or https

You can require https in your browser using the HTTPS Everywhere plugin, or internal control. NextDNS can't do anything because it's not a DNS-related issue. There's no mechanism within the DNS system to differentiate and control the specific protocol.

SLCW using an extension for using HTTPS isn't needed since years.

Important sites use HTTPS by default. Nowadays browser also provide an enforcement in setting if wanted.

Browser extensions only add attack surface (reduce your security) and do to needed permissions, get very much control over your browser and data (reduce your privacy). More can be read at Browser Tracking | Madaidan's Insecurities (madaidans-insecurities.github.io)
